
Sticky Grilled Figs with Honey Whipped Goats Cheese and Aleppo Pepper
This dish is perfect for one of those work at home days when you fancy something awesome but don’t have a lot of time. It takes about 10 minutes from grill to plate and tastes incredible! Obviously you can double up the portions if you’re serving for friends coming to dinner, as this dish works equally well as a starter.
Serves 1 as a quick lunch
Ingredients
4 figs – cut in half
1 tbsp balsamic vinegar
1 tsp olive oil
8oz goats cheese, at room temperature
40z cream cheese, at room temperature
2 tbsp runny honey
Garnish
2 tbsp pistachio nuts, crushed
1 tbsp pomegranate seeds
Salt and pepper, to taste
Fresh crusty bread
1/2 tsp Aleppo Pepper
Method
Preheat your grill to medium-high
In a mixing bowl, combine the goats cheese, cream cheese and honey. Blitz with a hand mixer starting slowly at first and then increasing the speed until your mixture becomes light and fluffy. You’re aiming for a smooth consistency. Cover and set aside.
Arrange the halved figs onto a baking sheet and drizzle over the olive oil and balsamic. Place under the grill for 8-10 minutes until the figs have softened and started to colour.
Remove the figs from the grill and arrange on a plate. Spoon over the whipped goats cheese.
Serve with the pistachio nuts and pomegranate seeds sprinkled over. Season with salt and finally, the beautiful Aleppo Pepper.
