Lemony Grilled Sardines
INGREDIENTS
- 4 garlic cloves, finely minced
- 50ml extra virgin olive oil
- 2 lemons, juice and zest
- 1 tsp paprika
- 1/2 ground black pepper
- 1/2 tsp turmeric powder
- 1/2 tsp ground ginger
- ½ tsp chilli powder
- 300g fresh sardines, cleaned, scaled, and gutted
- 2 tbsp chopped fresh parsley
- Lemon wedges
METHOD

In a bowl, mix the garlic, olive oil, lemon juice, zest, paprika, pepper, turmeric, ginger and chilli powder. -
Add the sardines to the bowl and mix through, making sure to rub the marinade inside the sardines. Leave to marinate in the fridge for 1 hour or longer. -
Fire up the BBQ or a griddle pan and once hot, add the sardines and grill for 3 minutes each side. -
Remove the sardines to a serving plate, sprinkle the parsley on top and serve with the lemon wedges.
