Cajun Schnitzel

We have a LOT of love for the humble schnitzel. Tender chicken dusted with our super-versatile Cajun mix and fried to perfection, all in under 20 minutes (hello WFH lunch!).
Add your favourite side for an easy meal, or make an amazing sandwich or wrap with your favourite pickles and condiments.

Ingredients
2 chicken breasts
1 egg, beaten
40g flour
1/2 tsp salt
50g breadcrumbs, fine or panko
1/2 tbsp Cajun Blend
Oil for frying

Method
Place the chicken in between cling film. Gently bash with a rolling pin to flatten and tenderise.
Get 3 wide bowls or deep plates. Into one, place the flour, Cajun mix and salt and mix. Into the second, crack the egg and whisk until smooth. In the third, place the breadcrumbs.
Dip the chicken into the seasoned flour, then egg (shaking off any excess) and finally into breadcrumbs. If you have extra egg and breadcrumbs mix, you can do a double coat by dipping back into the egg, then back into the breadcrumbs.
Shallow fry in a generous amount of oil for 4-5 minutes either side, until cooked through, crisp and golden brown – don't let the coating cook too quickly!
Drain on kitchen paper before serving.
