One pot pizza pasta

One Pot Pizza Pasta by Rachel Boyett

This super easy one-pot pasta uses the Baby Spice Italian blend for a delicious taste of Italy. Looks a little like pizza, and tastes a little like pizza, but it’s definitely pasta!

Serves 2 adults and 1 baby

Ingredients

1 tbsp olive oil
1 onion finely chopped
1/2 courgette grated
1 clove garlic crushed
1 tsp balsamic vinegar
1 can of chopped tomatoes (400g)
300ml water
1 cup (150g) mini star shaped pasta (or any other little pasta)
1 tsp Baby Spice Italian blend
1 ball of mozzarella (125g)

Method

Preheat your grill.

Using a large oven proof frying pan over a medium heat, heat the olive oil and fry the onions and courgette for 10mins (stirring occasionally so they do not burn). Add the garlic and balsamic vinegar and cook for another two minutes.

Add the chopped tomatoes, water, and Italian Blend and gently simmer for about 10mins until the sauce has started to reduce. Add the pasta and simmer until cooked (about 8 mins).

Turn off the heat. Dot over some mozzarella then grill for around 5 mins until the mozzarella starts to bubble.
