Ginger, carrot, and date cookies by Chelsea Lee
Who doesn't love cookies? These soft, yet crumbly, cookies are so easy to make and take no time at all to enjoy with your little ones.
Makes 6 cookies
INGREDIENTS
100g rolled oats
50g self raising flour
1tsp baking powder
50ml milk
1 egg
1tbsp olive oil
2tbsp maple syrup (honey if over 1)
20g chopped dates
1 medium carrot (grated)
1tsp Baby Spice Kitchen Gingerbread blend
METHOD
Preheat oven to 180 degrees (fan assisted).
Add flour, oats, baking powder and gingerbread spice to a bowl and mix.
In a measuring jug, add your oil and milk first, eggs and then the maple syrup. Mix well.
Combine wet and dry ingredients then add carrot and dates.
Roll mixture into balls and flatten on a lined baking tray.
Cook for 12 minutes
Cool on a cooling rack, then enjoy!
